Hearty food for cold evenings

As the nights draw in and the mercury drops on the thermometer, hot and filling dinners are the order of the day. Stews and casseroles are great, but can take ages to prepare - not ideal if you're hungry for some hearty fare when you get in from work! So try give this delicious potato pie a go - it's bound to have everyone coming back for seconds!

Preparation time: 30 minutes or less

Cooking time: 50 minutes - 1 hour

(serves 4)

Potato, Stilton cheese and onion pie


Ingredients:

  • 1kg (2.25lbs) floury potatoes, cut into chunks
  • 3 medium onions, halved and cut into segments
  • 50g (1.75oz) butter
  • 100ml (3.5floz) milk
  • 150g (5oz) Stilton cheese, crumbled
  • 25g (1oz) Parmesan cheese, grated
  • Salt
  • Freshly ground black pepper

Method:

  1. 1. Put the potato chunks into a large pan of salted water and bring to the boil. Turn the heat down to a fast simmer and cook the potato until tendered, around 15 minutes or so.
  2. 2. While the potatoes are cooking, peel and segment the onions. In a heavy-based frying pan melt half the butter and add the onion. Cook over a low heat, stirring occasionally to prevent sticking. After about 20 minutes the onion should be soft and sticky, but not too brown.
  3. 3. Set the oven to 200C/400F/Gas Mark 6. Butter the base and sides of a 28cm (11") baking dish. Spoon in half the mashed potato, add the onions and a good grinding of black pepper. Crumble over the Stilton cheese, then pile the rest of the mashed potato on top and smooth with the back of a spoon or spatula.
  4. 4. Sprinkle over the grated Parmesan and bake in the middle of the oven for 25 - 30 minutes. The pie is ready when the top turns golden and the Stilton cheese bubbles up around the edges.
